King vs. Coho

In Sitka, there are two species of salmon to choose from (or not): Chinook (King) and Coho. Both are available for fishing all season long. The differences are subtle but distinct and mostly have to do with the meat. Both of these Sitka salmon varieties are delicious, nutritious, and an exciting angler challenge!

Chinook (King) salmon is the prime rib steak of fish—the finest that it gets. The kind you break out the white tablecloth for. It has the most flavor and the highest content of Omega 3’s.

Coho salmon is like the top shelf free range chicken of fish. The meat is lighter in density with a milder flavor, but it pairs well with sauces and appeals more to some palettes.
